I get the question a lot, do you have options for clean food? Even comes up in classes due to some chef's using ingredients from a can. Now growing up and learning how to cook, I was also considering the past for the question. Interesting enough when you cook a Mexican cuisine, the clean food is almost given. The only part that I say you could slim down in mexican food is to trim the fat from the meat of an animal. Other than that the chili's the reductions, and combinations are some of the cleanest ways to cook. In my cookbook "10 Tacos Y Mas" you will see my first recipe is Flour Tortillas - 3 ingredients that is it! I don't even put salt in the flour mixture! Then when I do a grilled veggie chili puree with stock, something else in mexican style cuisine, yes considered clean and when I get the sourcing available, then even organic.

Recently I made a lot of thick soups with a good deal of veggies for a vegan request. When I explained only veggie stock, grilled Veggies; onions, carrots, celery, bell pepper, mushrooms, corn, poblanos, green beans and peas. Added a vegan style pasta Ditalini, very common in soup and small round cylinders so they mix well with the chunkier veggies. The richness of the broth with the flavor of a hint of the grill, and cut veggies in a nice appropriate size. Well people are saying, "keeping making it, you are on to something!"

I look forward to catering for all diets now, and adding the fire from a natural organic piece of wood!
