2nd year at Eggtoberfest as I returned with my team as Chef D.Mart, a Big Green Egg Influencer! Yes, in years past, I taught the master BBQ class, pizza, and Mexican cuisine at the culinary center for the headquarters of the Big Green Egg. Being invited once again makes me excited and overwhelmed to be a local chef, as most professional chefs travel from all over the U.S. and other countries. This year was unique as we were positioned very close to the entrance, and we noticed the continuous line, maybe serving a taco every 6 seconds for 4.5 hours! The significant part is when we were the busiest, and my crew mentioned when they walked to the restroom or were passing our line, people were saying, "This is the brisket line" or "We are getting the best taco again!" So repeat tasters and people know a Brisket taco with Avocado Crema is on their list to cook now! People also said, "Bottle your hot sauce!" as many asked how to buy this Hot Sauce! Sharing my Chorizo and egg Tacos, or even my Bloody Mary Recipe, had people saying I needed a restaurant, and I was pleasantly surprised.
