Pesto vs Chimichurri


As a chef, I like to write recipes and mix ingredients. Sometimes I even cross between recipes like Chimichurri and Pesto. Here is a quick rundown of each:

-Pesto - Basil, Italian Parsley, Garlic, Pine Nuts, Olive Oil, Parmesan -Chimichurri - Parsley, Oregano, Garlic, White Wine Vinegar, Red Pepper Flakes, Olive Oil -My Green Herb Mixture - Basil, Garlic, Shallot, Red Pepper Flakes, Lemon Juice, Dijon Mustard, Stone Ground Mustard, Olivelle Black Truffle infused Olive Oil, Red Wine Vinegar, Salty Roasted Pumpkin Seeds, Olive Oil. Aged cheese at times but not always, like aged parmesan.

I know you can customize Pesto and Chimichurri with some differences, so the above is just a simple recap for the common mixtures, nothing that will hold up in a chef court case : )

When I teach a class and have a recipe outline like this mixture, people love it. Talk about more complexity, pop, and deliciousness. The better part is that it can go on so many items. In the header, you see it was on the pizza but also my French omelet on top, but also with mushrooms inside the omelet. I do like pesto but typically only if someone gives it to me, it is almost plain now compared to what I make.
